For the Chicken

1 tbsp soy sauce
1 tsp cornstarch
For the Sauce
3 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce
1–2 tsp sugar (to taste)
1 tsp rice vinegar
½ cup chicken broth
For the Stir-Fry
2 tbsp vegetable oil
1 medium onion (roughly chopped)
3 garlic cloves (minced)
1-inch piece ginger (minced)
1 red bell pepper (sliced)
½ cup unsalted roasted cashews
2 green onions (chopped)
1 tsp cornstarch + 1 tbsp water (slurry)
Instructions
- Marinate the chicken with soy sauce and cornstarch for 10 minutes.
- Mix all sauce ingredients and set aside.
- Sauté chicken in oil until golden, remove and set aside.
- Cook onion, garlic, ginger, and bell pepper until tender.
- Add chicken back in, pour in the sauce, and simmer.
